I pitted and chopped about 100 apricots, which seemed like about triple that cause I had to look each one over and trim off the bird bites and patio bash bruises. But I persevered cause I can't stand the thought of all that fruit going to waste. Too bad my nectarine tree isn't near as prolific cause I'd just eat them all. And we're not done with apricots yet cause the tree is still about half full. Been taking them to work and giving bags away to the neighbors. Luckily they're more cheerfully received than excess zucchini LOL.
Canning is a lot of work. Imagine back in the day when you canned every bit of food your family ate during the winter. gack

Oh yum! Apricots are one of the best things on Earth! Your jam/sauce looks so pretty in the jars! Save me a coupla apricots!
ReplyDeleteOh my, I am SO envious! I haven't had REALLY GOOD apricots since I canned them myself in 1970...from my first husband's family's tree outside Santa Cruz, before we were married. You are so lucky. I haven't even bought an apricot in maybe 25 years because what we get here anymore just suck...taste like mealy cardboard. Can on, my friend!
ReplyDeleteWhat a LOT of work - I've never canned anything in my life - I just can't bring myself to do the work. But your trees are gorgeous and I'm sure you'll be glad you did it in a few months! Good on you!
